Ingredients

• ⅓ cup raw bulgur wheat
• ⅔ cup boiling water
• Pinch of salt
• ½ avocado, diced
• 2 celery sticks, chopped
• 2 kiwi fruits, sliced or chunked
• ½ cucumber, diced
• 40 g feta, crumbled
• 30 g lean biltong, sliced

How to build it
1. Base loaded: Combine bulgur wheat with boiling water and salt. Cover and let it stand for 15 minutes. Fluff with a fork and allow to cool.
2. Fresh and fierce: Dice the avo, cucumber, and celery. Slice the kiwi for a sweet, tangy kick.
3. Layer up: In a large bowl, mix the cooled bulgur with all the chopped ingredients.
4. Final flourish: Add crumbled feta and top with lean biltong strips.
5. Toss and go: Serve immediately, or chill for a fresh, packable lunch that still hits hard.
